Macaroni & Cheese Balls

These are great for entertaining and will satisfy both grown-ups and kids alike.

Directions

  1. Make Amy’s Macaroni & Cheese according to the directions on the box then add an extra 1⁄2 cup of grated cheese and mix together thoroughly. Pour into a 9x9 dish, cover and chill overnight or for at least 5 hours.
  2. Once the mixture is chilled, use an ice cream scoop to form balls then place them on a parchment-lined baking sheet.
  3. Pour a half cup of bread crumbs into a bowl and add salt to taste. Roll the balls in the bread crumbs.
  4. Pour 4 cups of vegetable oil into a deep saucepan then heat on medium-high until the oil reaches 350°F. Gently drop the balls into the oil and fry for 3-5 minutes or until golden brown.
  5. While the balls are frying, make a tangy ranch dip by mixing vegan mayo, milk, onion powder, garlic powder, dill, parsley, chives and lemon juice. Season with salt and freshly ground pepper then set aside.
  6. Serve the macaroni & cheese balls warm, alongside the dressing for easy dipping.
